family meals: week 107

Turkey Burgers and Baked Onion Rings. Next time, I’d go lighter on the cornmeal for the onion ring breading, but this will definitely be getting made again. Baked onion rings are amazing, same delicious taste as regular onion rings, but without all that deep frying! I was really craving onion rings, so I thought burgers would go well, but I was out of buns, so I made whole wheat focaccia and used those as buns. I used this recipe and tripled it, so that I have plenty leftover to freeze for when we want some homemade pizza.

Spaghettini with Roasted Tomatoes, Fresh Basil, and Toasted Garlic Breadcrumbs. This recipe with fresh tomatoes and basil from our garden was absolutely delicious. I highly recommend making this and tripling that breadcrumb recipe!

Week of 8/17 – 8/21
Monday: Wonton Soup
Tuesday: Leftovers
Wednesday: Spaghetti and Meatballs
Thursday: Homemade Pizza
Friday: Tilapia Ceviche

I need some ideas of simple meals to make for large groups. I’m thinking lasagna, but have never tried that, so I would love to hear (read) any suggestions you might have.

    Hi Ruby,

    Lasagna is a great dish for large groups and you can prepare it the day before which makes it taste even better. I have often done so and it’s really comfortable to just put it into the oven before your guests arrive. I do the classic Italian version with sauce Bolognese and sauce Bechamel or a version with red lentils. Both are really delicious.

    Your posts about your meals are always really interesting because your cooking is way different to mine here in Austria and that’s really inspiring!

    That pasta looks fantastic, I’ll definitely be making it soon! I make lasagna pretty often and like to make it healthy since “traditional” lasagna is a little too heavy for me. I do stuff like make it with ground turkey, add carrots to the red sauce, and kale/spinach mix to the ricotta. If you’re interested I can send you the loose recipe I’ve developed 🙂

    One of our family favorites that you can make in mass quantity is Chicken Broccoli Casserole. Imagine in a large dish a layer of lightly steamed broccoli, a layer of shredded, cooked chicken breast, topped with a creamy curry mayo lemon sauce and sprinkled with cheddar cheese on top. I know the ingredients sound funky together, but put over a bowl of brown rice it’s fantastic! Email me if you’re interested in the recipe 🙂

    Hi Rubyellen,
    I second the lasagne option. I do the bologna isle and bechamel version. I think it actually tastes better if I make it up one day and let it sit overnight in the fridge and then cook it the next day. I think it allows the flavours to really mix well. Then you could just add garlic bread and a nice large salad.
