family mealsfamily mealsBlack Bean Rice Bowl with Corn Salsa and Chipotle. One of my go-tos for Thursday night Dinner Club. I was trying to channel Freebirds, which is way better than Chipotle, so it did it’s job.

family mealsfamily mealsKorean Pork Roast Sesame Leaf Wraps. This dish is always a winner. There’s so much flavor packed into one bite. It’s tangy, sweet, spicy, sour, and the different textures just go so well together. It takes prepping to make the side dishes, but so worth it.

Week of 5/26 – May 30
Monday: Sopes
Tuesday: Black Bean Tacos
Wednesday: Leftovers
Thursday: Homemade pizza
Friday: Sushi night

I can’t believe it’s finally almost summer. I’m so excited for our tomatoes to come in, so we can start adding fresh tomatoes to our meals. I look forward to growing tomatoes every year!

    Hey Ruby,
    Quick question,how on earth do you keep your girls occupied so you can make such amazing food? I only have 2. A ten week old and a toddler but unless my 2.5 year old is watching tv I have to wait til his dad gets home before even attempting to cook dinner so everything has to be as simple (read boring and not that healthy) as possible.

      They play with each other while I cook. I think as both of yours get older and they really start to engage each other, you’ll find more time to cook too. We have a family sketchbook on the coffee table that they all often color in while I’m cooking, or they’re just running around downstairs (making messes), or maybe one will be practicing piano. Sometimes they are also in the backyard playing (and if they are feeling especially rowdy and I need peace, I bust out the iPad). When True and Brave were under 2, we did a lot of frozen Trader Joe’s foods, and Ben cooked dinner when he got home. It wasn’t until I actually started meal planning that I started really cooking. Don’t beat yourself up if you aren’t able to get to home cooked meals at this stage, you are already doing a great job I’m sure! I also only cook about 2-3 meals a week, and make sure to make large portions to carry over into another evening. The crockpot is also great in throwing everything in it and not having to do much cooking.
