This friendship bread is quite addicting. It is perfect because it is not too sweet. Now, my second attempt is much healthier than the first. I used fat free milk, whole wheat flour, applesauce instead of oil, and a Splenda baking mix instead of regular sugar. It came out grittier due to the whole wheat flour, but it still taste good and the bread is still extra moist. I don’t feel bad eating this healthified version, though too bad my girls still can’t have any of this as it has milk and eggs and True is allergic to both. Brave isn’t, but we try to keep things fair. Plus, they really don’t need to eat this, so they don’t. Most of the time they don’t complain about it.

Since True’s birthday is coming, I am going to figure out a healthy cake-ish recipe to make for my dairy & egg free child. I made one for her first birthday and she didn’t even want to try it. Then again, we tried to give her real cake with the works and she didn’t want to try that too. I have a feeling this year, she will want to try it. She calls all cake-cookie-candy-ish foods “junk,” but I think she is getting curious to want to try it. Her (and Brave’s) everyday dessert is called fruit, sometimes vegetables. She really does love them all (fruits and vegetables that is!). I am so thankful for that.

I have a few recipes I may consider making for her special birthday cake, but does anyone have any other recipes to share? Remember, it needs to be dairy and egg free (and peanut free cause she is allergic to that too!). I need all the help I can get!
Or anyone know any dairy-egg free cupcake recipes? I think she is most curious about cupcakes.

And it feels so right… oh what a night!
We all love our sushi. We don’t get it too often, usually when someone is in town or on special occasions, but when we do, we love to indulge! Even the girls love sushi, they have been dying to reach out and eat our raw pieces, but we must wait until they are a bit older to give them those…

I wish so many of us lived closer together and are actually able to meet. I am sure we would all be the best of friends and if it were so, you would be one of three to receive a bag to make some Amish Friendship Bread

Ben received the starter bag and instructions from a co-worker almost 10 days ago and today was the day to finally bake it. I must say it came out moist and tasty and I am glad that I get to have two loaves. Though, I am sure the nutritional content is not that great… loads of sugar and oil are not the most recommended thing, but it tastes oh so good! I am keeping another starter to attempt to make a “healthier” version of it in 10 days. I will use whole wheat flour, applesauce, and maybe splenda-mix to see how that turns out. I hope it turns out just as yummy, but I guess there is only one way to find out.

We have been eating burgers lately, but healthifying them. The latest crave was for a BLT burger. Yum. We used buffalo meat (lower in fat), turkey bacon (thanks to your suggestions), whole wheat buns, and baked sweet potato fries. I made Ben’s with a buffalo soy-mayonnaise and mine with garlic soy-mayonnaise. Really, it was yum…

Peanut butter & jelly, with a teaspoon of condense milk, on a pretty plate, makes for a very nice lunch…

For dinner, I wanted a western bacon cheeseburger, minus all the fat, so I set off to make us some healthified onion rings. Sliced onions, dipped in egg whites, rolled in Panko italian breadcrumbs, stuck in the oven for 20 minutes makes yummy, healthy onion rings…

I am pretty happy with the way they turned out, but wish the breading stuck more. Anyone made healthified onion rings before? Any tips? I am definitely going to work on perfecting this recipe because I love onion rings, but do not want to deal with all the fat that regular onion rings so generously give. 
We made some sirloin burgers, which are lower in fat than regular meat, stuck in my healthified onion rings, soy bacon (yes, soy tastes darn close!), spinach, cheese, and can’t forget the barbecue sauce and thus enjoyed a much heart happy version of the western bacon cheeseburger. My body and tummy thanks me!
For those of you bothered by the idea of soy bacon… really, it tastes good, just make sure it is extra crispy and you’ll never know the difference!
