Crunchy Turkey Tacos. I know crunchy shell tacos aren’t authentic Mexican food, but I like it anyway. It’s how I grew up eating tacos, so it reminds me of my childhood. The first time Ben made me tacos, while we were dating, he made them with soft corn tortillas. I thought it was so strange. Well, I later learn that the crunchy shell isn’t authentic Mexican food at all. I’m used to soft corn tortillas now, but I love the crunchy shell from time to time.

Those tacos look delicious. What did you put in them, besides turkey of course? 😉
Spinach, bell peppers, greek yogurt, shredded cheese, and salsa!
Yum! I’m so glad I have plans for Tex-Mex food tonight because taco talk is making me hungry. I’m making paleo empanadas with yuca dough. They are SO good. It’s special to have a ‘normal’ food, even made a strange way (with yuca, which actually turns out delicious and crispy) because we’re on a crazy protocol diet right now called Autoimmune Paleo. Trying to get rid of my son’s horrible eczema. Anyway, yuca is a really fun ingredient to play with!
That sounds good! Do you have a recipe to share? I would love to try!
Sure, it’s from here! I add extra seasonings, and the dough needs salt. You also might need a high powered blender, it even makes my Vitamix quit in the middle and I’m curious if a food processor would work or not, because it’s so sticky.
