Oh man, oh man… being pregnant and watching food network is a very dangerous thing! They should have some sort of warning along that bottom for us hormonal food avoiding and craving people. Sometimes there will be a particular dish showing and just seeing it makes me sick, so I run upstairs to avoid the nauseating feeling. Other times, I see something and instantly want it and those are the things that get me especially in trouble!
Last week, there were two things that got me instantly while watching “The Best Thing I Ever Ate“. The first was the cannoli and now I so desperately want one! I seriously dreamt about it that night and it has made me want it even more. Since I didn’t know where to get one, the next day I made Ben go to cheesecake factory and get me a slice of plain cheesecake. Yummity yum! I ate is very slowly of course, extending out over the next few nights because if I eat too much of something I get an adverse reaction and all the food ends up in the toilet. Not fun.
The second thing that got me were the ebelskivers! I had never heard of those before, but they looked bomb diggity (um, Lin I am sounding like you)!!! I wanted some right there and while we were watching Ben tells me he saw an ebelskiver pan at the thrift store the other day and almost bought it, but didn’t know what to do with it! Darn. Darn. Darn. The one that they were showing had banana inside a pancake type batter with a cinnamon and sugar coating. Thus, a few days later the craving was still there and I was still lacking an ebelskiver pan, so I made my own!

I made buttermilk pancake batter and thinly sliced up some bananas. Then on our griddle, I made a pancake and while it was cooking it on one side, added the banana on top, then folded it over like a taco (the banana was sandwiched inside) and kept cooking it until it was throughly cooked. When they were done, I coated them with cinnamon and sugar and voila! I had my own version of ebelskivers!

Now, it probably wasn’t really the same, but I guessed it did the job (at least for now). My version wasn’t bad and still did taste good, but now I am determined to get me one of these little pans (can I put this on a baby registry?!). I have grand plans of making some filled with nutella, custard, and basically anything that makes my baby belly sing!
Anyone have experience making ebelskivers? Any good recipes? Or maybe have a pan you want to get rid of. Please do share!!!

    Yes! I've made them! Got my pan (mix and recipes) from Williams Sonoma. I made a bunch of different ones…marmalade inside, raspberry jam, nutella….they are soooo good!!!

    oh man I totally craved pancakes when I was pregnant with my last baby and ebelskivers have been a tradition in our family since I was a girl. I have had a pan for many years though and have only made them a handful of time for my kids because I always wait for my Mom to do it – but last October with all the trick or treat candy around we decided to make a batch and stick random bite sized candy bars in them..it was so fun + yummy and it made me realize how many fun things I could stuff into those babies!
    congrats on baby number four, seriously exciting and crazy but truly a blessing hope you feel better soon! I think a an ebelskivers pan might help 🙂

    I just looked up the pan and recognized it hehe. but I didn't know that's what it's called…good to know :o)
    I thought your version is what it's supposed to look like haha….but hey that is some pretty darn good improv!

    my husband is the king of making ebelskivers in our household (the batch I made ended up tastig like burnt chocolate), we have the pan, turning tools and even the cookbook from williams-sonoma, and I have to say one of the best purchases we made was the 'pancake pen' that they have… it works great for quickly and neatly adding the batter to the pan

    i never heard of them either until i got married. my husband's family is swedish and he grew up making them on holidays and special occasions, so now we make them on christmas morning! and any other time we are craving some deliciousness 🙂 and i know what you mean about the food channel and being pregnant – last night i was drooling for some jamaican food, ha!

    I grew up in Solvang and worked in a Danish Restaurant. 90% of the restaurant in town used Krusteaz pancake mix and added cinnamon. The what sets them apart is serving them with powdered sugar and raspberry jam (made with orange juice). Aebleskiver are my favorite!

    O they look amazing!! I got the baking buzz in the weekend, made lemon and blueberry pancakes for lunch, then made red velvet cupcakes, of which I am currently eating. I have a sweet tooth… At least you are eating for two, I'm only eating for one!

    We live in an Italian city where cannolis flow freely. They are everywhere! You can even get them at the pizza joints. We have a bakery called Cafe Cannoli where they make cannoli cake. I loooove my cannoli! I always get one to go…

    i agree!! my poor DH is pretty much my personal chef and he made these EVERY weekend, filled with nutella and topped with either bananas or raspberries!! <3

    i am almost 4 mos post partum and REALLY crave things off of food tv still.

  • Never had an ebelskiver but they sound good!

    I do however LOVE cannoli. One of my favorite food memories is about cannoli. We were at the Jersey shore walking along the boardwalk and we came to an Italian bakery. We bought 2 cannoli to share at the hotel later. I remember walking along with that bag and marveling at how heavy those two pastries were! Eating them later was wonderful!!!

    Buca di Beppo has cannoli thats not too shabby, I'm assuming there should be one relatively close if you are in SoCal. Also I make a super easy (non authentic) version that is still super yummy. Just google cannoli filling recipes and put them in little waffle cones. It's super good! And SO easy.

    For Christmas this year, my fiance and I got a pan and a gift card to Williams-sonoma. We purchased their book:

    and now, we make them all the time. Tomorrow night is breakfast for dinner and we're having ham & cheese ebleskivers with fruit salad and yogurt parfaits. They are so much fun. Definitely get the pan and the cookbook. You won't be disappointed!

    There's a good pan in the Williams Sonoma catalog that I want, but I just never get around to requesting one as a gift (it's just one of those things you don't think to buy for yourself). I found a whole recipe book at a thrift store a couple weeks ago of ebelskiver recipes, and every.single.one looked so good! So the plan is to ask for a pan for Mother's Day. 🙂 Seeing you write this post was kind of weird. It's like you read my mind. Great minds do think alike! 🙂

    I have the pan and use it once in a while.. it takes a LOT of time to make them for a family of 5! I just get the rec, from william sonoma online..check ebay for one or bed bath and beyond as they are half the price there.
    So we talked a while ago about a 4th .. are you purchasing a bigger car in the next few months?
    I am still so undecided but I just can not rule it out. I would love Olivia to have sister but you just cant guarantee that. That said after our convos about adding another child I am seeing new babies everywhere right now in Australia… I want one! You lucky girl! I am thrilled for you. And a little envious as well ;o)

    I've never made them before but I know exactly what you are talking about because my internet friend, Bethany, makes them. Whenever I see an ebelskiver pan I think of her. 🙂

    I live in Denmark, Europe, which is the HOME of æbleskiver, as we call(spell) them 😀
    They taste amazing, especially when dipped in strawberry jam and confectioners sugar 🙂 Though I dont celebrate it, I love Christmas for that as around christmas time, the stores are PACKED with æbleskiver 😀

    You should head over to Claro's! It's an Italian shop in Alhambra (Pasadena?) and they make fresh, delicious, LEGIT cannoli!!
