Whole Wheat Spaghetti & Herb Stuffed Meatballs. This is always a winner in our house. My friend, Reese, even jokingly refers to it as the “Bratcher Meatballs.” HA! We usually use the Trader Joe’s marinara sauce, but since it doesn’t use organic tomatoes, I think we are going to try something else. Anyone have an easy marinara recipe you can share?

I’ve been craving a Red Robin mushroom burger, and it’s been years since I had one. I just looked up the calories, since I used to eat that burger all the time back in high school and college, and my oh my, it’s a whoppin’ 961 calories! That doesn’t even include the fries and honey mustard I use to guzzle down with it. I’m definitely going to attempt to make my own (much healthier) version of it.
My husband and I have fallen in love with this easy marinara recipe: Add 2 28 Oz cans of whole plum San Marzano tomatoes to a pot along with a pinch of salt, one halved yellow onion, 5 pats of butter, and one carrot sliced in large chunks. Simmer for one hour and then blend to desired consistency. It’s amazing how simple it is and the carrot gives it a nice sweetness.
I haven’t had spaghetti and meatballs in a long, long time. This post is making me really want some. I just need to go hunting for gluten-free noodles. Thanks for the recipes!
TJ does make an organic marinara, but it has soybean oil in it, which I try to avoid. Whole Foods 365 makes organic marinara and the Four Cheese flavor is tasty, has no soybean oil, and no added sugar. That’s what I like for easy marinara!
I’ve been on a quinoa pasta kick– i’ve heard mixed reviews from others but I’m hooked! It doesn’t keep as leftovers as easily as regular pasta and doesn’t have quite the same flavor, but I’d highly recommend it as another healthy alternative!
