Honey-Lime Sweet Potato Black Bean Corn Tacos. Yes, make this. It’s so good! I think next time I’ll add more cayenne to the sweet potatoes, but even using the bean and sweet potato in a rice bowl is so delicious.
Slow Cooker Roast. It was a good basic and balanced meal. I changed up the recipe a bit because it seemed too boring for me, so I think it came out with more flavors with my changes. I’ll share it with you. I like how easy everything always is when you throw it in a crockpot, and Ben also liked how this meal automatically had a lot of veggies. I there were more carrots to meat the way I made it.

Do you and your family eat out for dinner or do you prefer to stay home and cook? Obviously, we are a stay home and cook family, but we do go out to eat once a month. For a family of six, it can add up if we did it more than that, so we much prefer to eat at home. Thankfully though, my family likes my home cooking.
P.S. I think I’m going to stick with the simple white background. I might keep playing with it, but I like the simplicity of the white. Thanks for your input!
those tacos look amazing!

You should try the recipe!
These meals look amazing. We used to eat out and bring home take-out quite often. We’re a family of 5, so it definitely does add up!
Recently, my 3 children have recently been tested for allergies and found that they are allergic to gluten, soy beans, egg whites, cow’s milk, shrimp, cod, peanuts. It’s hard to find a restaurant that caters to all those things so we’re cooking from home all the time. I do like the challenge although there are those nights where you want to throw your hands up in the air and just order in a pizza.
You’ve mentioned that your husband is a dietician. I was wondering if he’d do a guest post here about his job? Maybe a little bit on his training background or a day in the life sort of post? I like that his job doesn’t stop at his workplace and that it also comes home to your family with the vegetable/fruit gardening and healthy cooking at home. Ever since the allergy results came back, my thinking of food has gone ten fold and I’m curious about moving forward towards a career in dietetics/nutrition. No pressure, I know this request is totally out of left field! I really enjoy your meal plan series, thanks for sharing!
* I meant that I do like the challenge of cooking a meal that’s nutritious/delicious and allergy compliant but sometimes wish I could just order in a pizza. SMH. My typing can’t catch up to my thoughts. Haha.
i’m happy i found your blog today! i’m going to try the sweet potato tacos for dinner tonight. looking forward to following more of your posts
