Langostino Sopes. We still had some langostino leftover in the freezer, so for Memorial Day I made more sopes (made here for Mother’s Day). Usually Ben makes it, but this was the first time I did, so I will have the recipe to share with you soon. It really is one of my favorite recipes!

My mother-in-law is in town, so I made bossam again so she could try it. She loved it and made it a Korean-Mexican fusion by using chipotle sauce on top of hers! What have you been eating for dinner lately?
Black Bean Rice Bowl with Corn Salsa and Chipotle. One of my go-tos for Thursday night Dinner Club. I was trying to channel Freebirds, which is way better than Chipotle, so it did it’s job.
Korean Pork Roast Sesame Leaf Wraps.This dish is always a winner. There’s so much flavor packed into one bite. It’s tangy, sweet, spicy, sour, and the different textures just go so well together. It takes prepping to make the side dishes, but so worth it.

I can’t believe it’s finally almost summer. I’m so excited for our tomatoes to come in, so we can start adding fresh tomatoes to our meals. I look forward to growing tomatoes every year!
Langostino Sopes. This is one of my most favorite things to eat. Ben makes it, and made it for Mother’s Day, and I was happy to have plenty of leftovers for dinner Monday night.
Spaghetti and Herb Filled Turkey Meatballs. I’ve gotta say that these meatballs were bomb dot com. I usually don’t like meatballs, but these were so yummy. I put in a whole package of panko bread crumbs, a lot of herbs from the garden (basil, sage, marjoram), onions, garlic, and salt and pepper. Everyone who came to Dinner Club on Thursday loved them! There were none leftover.

Tuesday: It’s book release day, so I’m not cooking and we’re going to pick up sushi from my fave sushi place!

Family meals on the blog keep me accountable. I started it because I wanted to get better at cooking for my family and meal planning really helped me be more efficient. Seventy-four weeks later and I’ve tried a lot of different recipes and feel so much more comfortable and confident in the kitchen. I can work with what we have in the refrigerator and pantry, and my girls have tried so many different things. It has just been a win all around.
Honey-Lime Sweet Potato Black Bean Corn Tacos. Yes, make this. It’s so good! I think next time I’ll add more cayenne to the sweet potatoes, but even using the bean and sweet potato in a rice bowl is so delicious.
Slow Cooker Roast.It was a good basic and balanced meal. I changed up the recipe a bit because it seemed too boring for me, so I think it came out with more flavors with my changes. I’ll share it with you. I like how easy everything always is when you throw it in a crockpot, and Ben also liked how this meal automatically had a lot of veggies. I there were more carrots to meat the way I made it.

Do you and your family eat out for dinner or do you prefer to stay home and cook? Obviously, we are a stay home and cook family, but we do go out to eat once a month. For a family of six, it can add up if we did it more than that, so we much prefer to eat at home. Thankfully though, my family likes my home cooking.
P.S. I think I’m going to stick with the simple white background. I might keep playing with it, but I like the simplicity of the white. Thanks for your input!
I’ve been playing around with my food pictures and using different backgrounds instead of just the plain white like before. Do you miss the plain white or do you like me changing it up a bit? I’d love to “style” the photos more, but I literally make a plate, put it on the background, take a picture, put in on the dinner table, and then we eat. I’m pretty quick about it and I don’t like to eat cold food, so I go as fast as I could, and I don’t take too much time to make it all look fancy. Then, our dinner tables really look like this. It’s just a regular family having dinner on a regular table with regular dinner messes. It’s totally not styled and just real life. Sometimes, I’ll be intentional on making sure placemats, napkins, and dishes match, but most times I just let the girls set the table, so I’m cool with whatever.
Tilapia Ceviche on Crispy Wontons. We eat this almost every Friday night. It’s Ben’s most favorite thing to eat and I put in like 8 habaneros, so to say it’s spicy is an understatement. This particular batch had so much fire that I had sweat on my cheeks and nose (and I never sweat), but I still kept on eating because it’s just that good (and we love spicy that much!).

This week was totally different from our norm since I flew in late Monday night, then Ben worked late Tuesday, Wednesday was a quick dinner because we wanted to work in the garden, and then Thursday was kind of like our Friday, since Ben didn’t work Friday. We also didn’t have Dinner Club this week because our friends are off in Hawaii, so I only officially cooked once this week. I did make the girls a meal on Tuesday night, but it was one of those quick-whip-whatever-is-lying-around-in-the-fridge kind of thing. What’s your normal meal planning look like?
I have a large growing pile of fabric scraps. I refuse to throw them away because I am sure they can be used for something. I have been seeing different types of interesting necklaces made of buttons, beads, and fabric. Then, I figured why not make one out of my scraps...
I think it made my white shirt a little less boring. This was so quick and easy to make.
How to make a recycled scraps necklace (which is very similar to the straps on my braided tablecloth bag):
1. Take your scrap fabric, I cut a .5''-1'' snip and tear the rest of the fabric down for a nice frayed edge. Used 3 different fabrics for each strand.
2. Take 3 of the torn pieces and tie the ends together with a rubber band.
3. Braid the 3 pieces together and tie ends together with rubber band when done.
4. Repeat steps 2 & 3 for more strands. Remember you can make the strands any length you want, if run out of fabric, just weave more into the braid.
5. Once all the strands you want are braided, gather one end of each strand together and straight stitch together with sewing machine. Repeat for the other ends of the strands. Snip off any excess.
6. Gather ends of the necklace and sew together (snip excess) or a ribbon can be sewn at the ends to be able to tie the necklace closed, but I just sewed both ends together.
7. Voila! A nice way to make use of all your lovely scraps.
